Chicken Taco

  • 1 whole wheat tortilla
  • 3 oz grilled chicken
  • 1/2 cup mixed sautéed peppers and onions
  • 1 oz reduced-fat cheese
  • 1 cup cooked brown rice
  • 1 cup red grapes
  • 2 TBS guacamole
  • 1 package taco seasoning

Directions

  • Cook rice according to directions on box.
  • Heat 2 pans over medium heat.
  • Add mixed peppers and onions to heated pan and cook until tender.
  • Chop chicken into 1"cubes and add to 2nd heated pan and cook until no longer pink in center.
  • Add taco seasoning and mix with chicken and cooked vegetables.
  • Serve with guacamole.
