Beef & Vegetable Stir-Fry
Makes 4, ¾ cup servings – 180 calories & 6 fat grams

  • 12 oz. beef round steak, boneless
  • 1 tsp. oil
  • ½ cup sliced carrots
  • ½ cup sliced celery
  • ½ cup sliced onions
  • 1 T. soy sauce
  • 1/8 tsp. garlic powder
  • 1 dash pepper
  • 2 cups zucchini, cut into thin strips
  • 2 T. stir-fry sauce or glaze

Directions

Brown meat in oil until no longer red. Reduce heat. Add carrots, celery, onion, and seasonings. Cover and cook until carrots are slightly tender, 3-4 minutes. Add zucchini, cook until vegetables are tender-crisp, 3-4 minutes. Add stir-fry glaze. Stir until all is lightly coated.
