Luncheon Chicken Salad
Makes 6, 1-cup servings – 183 calories & 4 fat grams

  • 2 cups cubed, cooked chicken breast
  • 1 ½ cup seedless red grapes
  • 1 cup cubed, unpeeled Red Delicious apple
  • ¼ cup raisins
  • 2/3 cup celery, sliced diagonally
  • 2 T. diced purple onion
  • 1/3 cup plain, non-fat yogurt
  • 2 T. low-cal mayonnaise
  • 1 ½ T. lemon juice
  • ¼ tsp. salt
  • 1 T. chopped fresh celery leaves
  • 6 Boston lettuce leaves

Directions

Combine chicken, apple, celery, grapes, raisins, and onion in bowl. Blend remaining ingredients and toss with salad. Chill. Serve on individual lettuce-lined serving plates.
