Luncheon Chicken Salad
Makes 6, 1-cup servings – 183 calories & 4 fat grams
- 2 cups cubed, cooked chicken breast
- 1 ½ cup seedless red grapes
- 1 cup cubed, unpeeled Red Delicious apple
- ¼ cup raisins
- 2/3 cup celery, sliced diagonally
- 2 T. diced purple onion
- 1/3 cup plain, non-fat yogurt
- 2 T. low-cal mayonnaise
- 1 ½ T. lemon juice
- ¼ tsp. salt
- 1 T. chopped fresh celery leaves
- 6 Boston lettuce leaves
Directions
Combine chicken, apple, celery, grapes, raisins, and onion in bowl. Blend remaining ingredients and toss with salad. Chill. Serve on individual lettuce-lined serving plates.
